Lemon Loaf Cake Recipe


3 scoops UMP Vanilla
1/2 cup Oat Flour
1/2 tsp Baking Soda
1/2 tsp Baking Powder
1/2 tsp Himalayan Pink Sea Salt
3 Eggs
1/2 cup Truvia Bake Blend
2 tbs Butter (melted)
1 tsp Vanilla Extract
1/2 cup Lemon Juice (may use real lemons)
1/2 cup Coconut Oil


Combine UMP, Oat Flour, Baking Soda, Baking Powder and Salt in a bowl.

In a second bowl, use a hand mixer to blend the eggs, truvia, butter, vanilla extract, lemon extract, and lemon juice.

Combine wet ingredients with dry ingredients and blend until very smooth. Add Coconut Oil and mix again.

Pour batter into a 9×5 inch loaf pan (pre-spray with baking Pam). Bake at 350 for 40 minutes or until a toothpick comes out clean.

When loaf is cooled, remove from the pan and frost!

Lemon Icing Ingredients

1 scoop UMP Vanilla
1/2 tsp Lemon Extract
2 TBS Egg Whites
2 TBS Powdered Sugar

Gradually add water to mix consistency desired
